3 cups cooked rice eg Basmati
3 slices ham, roughly chopped
1 carrot, finely diced
1 bunch spring onion, thinly sliced
1 zucchini, diced
½ cup broccoli pieces
½ cup frozen peas
1 small can baby corn
1 Tbsp soy sauce
1 Tbsp rice vinegar
a few drops sesame oil
handful of peeled, cooked prawns (optional)
Cook the rice as it says on the packet.
In a large frying pan or wok add a few drops of sesame oil.
Crack the eggs in a small bowl and use a fork to beat together.
Add beaten egg to the pan. As the egg begins to set, flip it over with an egg lifter.
When the egg is cooked remove from the pan and slice roughly. You will add the egg back into the pan at the end.
Add all the chopped vegetables to the pan and use the egg lifter to mix every so often.
Cook these vegetables until tender or the way you like it.
Add the cooked rice and mix around with the vegetables.
Then add the ham, prawns and egg.
Sprinkle some soy sauce to taste (which means how you like it) and stir through
Add rice vinegar if you want to or you can leave it out.
Serve. Any leftovers can be frozen.
